I thought, "Man. That's a cool idea, but some stuff kinda feels off," so I started working on my own version of the Great Fox. I have the loadout chosen. I just need to get it all setup in the proper layout with the images and stuff. What I really want to do as well is take the Arwing ship mod and use the image from that for the Anti-Ship Mk I drones that it'll have.

It has one Heavy Laser Mk II (the double laser turret under the GF) with room for one more weapon and four Anti-Ship Mark I drones (the Arwings). It starts out with no shields, no cloaking, no teleporter, two points in engines, three in weapons, one each in medbay and oxygen, and the full eight in drone control. It has one point in the three subsystems, and 14 reactor power. The augments are Drone Recovery Arm (because why would they leave the Arwings behind) and Rock Plating (to at least somewhat make up for the lack of shields). The crew is one Human, one Zoltan, one Engi, and one Mantis.
In testing it worked well as long as I managed my scrap and crew carefully and didn't take any unnecessary risks with events or jumps (oh, it also does not like being boarded). I got a few lucky events and managed to beat the boss on normal. I'm thinking it probably needs to lose the Rock Plating to be more compatible with vanilla FTL, but otherwise it'd make a decent ship for an initially challenging run through Infinite Space with Captain's Edition.
